Neck ribs?
 
We recently got our hog back from the meat market. First time we've ever bought a pig. I have 2 packages marked "plate ribs". Those are obviously spare ribs. I have 2 other packages marked "neck ribs" What are those and how do I cook them? And where did my baby back ribs go? I see nothing in there that looks like baby back ribs. I got the spares on the smoker right now. Can't wait to eat them.

They're most likely neck bones. Very tasty and an old tyme barbecue favorite at my house. Treat them just like the trim from belly ribs and you will be a happy camper. You can also make neck bones and rice with them which calls for braising them.

The cut sheet said 240lbs. I'm not sure if that was on the hook or before it was slaughtered. The guy I talked to at the meat market said it was a big pig. Bigger than they normally get.

Thanks thirdeye. I went ahead and threw 1 package of the neck ribs on the same rack as the rib trimmings. We'll see how they turn out.
