Buttermilk Biscuits & BBQ
Yes this would be an odd combination without my tutorial on how to make it work.:-P
So lets begin at the freezer; Apple wood smoked Boston Butt http://i128.photobucket.com/albums/p...2007/010-1.jpg In order to make the best biscuits you got to get your hands dirty. You need flour, nonfat buttermilk, lard or veg. shortening and a desire to make the best biscuit you ever tasted. First thing you do is pre-heat your oven to 500* yes that's what I said 500*, Reason being that most folks tend to over bake their biscuits and end up with a hard biscuit instead of a nice fluffy melt in your mouth one. Use of hand required to get it right, you have to knead your mixture by hand to know when it is ready. Rule of thumb; If it feels like the real thing, not kneaded enough. If it feels like a implant stop kneading. Hands On; http://i128.photobucket.com/albums/p...2007/007-3.jpg I use a biscuit cutter for size uniformity. http://i128.photobucket.com/albums/p...2007/008-3.jpg Before the Oven; http://i128.photobucket.com/albums/p...2007/009-3.jpg After the oven; http://i128.photobucket.com/albums/p...2007/011-3.jpg A 4 carb lunch begins with a biscuit and fried egg white; http://i128.photobucket.com/albums/p...2007/012-2.jpg Added a piece of fat free cheese (Borden's has best flavor;) http://i128.photobucket.com/albums/p...2007/013-2.jpg Add half slice of fried bolonga; http://i128.photobucket.com/albums/p...2007/014-3.jpg I'm working on the BBQ side of this Thread for tonight's dinner and will share how to use you Biscuit's and BBQ together.:hungry: |
Looks good Bobby... I'm still working on my biscuits.

I just got a craving for biscuits.

Outstanding looking meal right there!!!
500 degrees sounds kind of high for the oven but your biscuits look awesome Bobby. |

I thought so too when my Mama first taught me to make biscuits. I soon discovered that Mama knew what she was talking about. I was young but I listened. It only takes 15 to 20 minutes to cook them depending on the oven. You got to watch them close as too not over cook them. |

I agree LMAJ, your biscuits is what made me want one. |
Thanks guys, but they weren't as light and fluffy as I want them to be.
Glad to be able to inspire you Bobby... learning here since I didn't have a southern grandmother to learn from.. Or any grandmother for that matter. |
I have Two of the fat boy Ones, Pleassssse! (the words Light, free no fat have no place in my diet) I came into this world neked & hungry Intend to leave full of great food wearing a Wurlitzer Crate.

It's an acquired taste but a necessary one for me. It's not too bad but most of the time I just don't have any. |
I'm a little lost with the fat free cheese, egg white, then the buttermilk biscuit made with lard :-P. Just kidding man. Those biscuits sound terrific. And thats a tasty breakfast for just 4 carbs.

Alright in the pot here is just apple juice, 1/2 cup ketchup and 1/2 cup brown sugar and one of them packets of McCormick's pulled pork spices. I don't use cider vinegar with this because it tends to be over powering.
Simmer until every thing dissolves; http://i128.photobucket.com/albums/p...2007/016-2.jpg then add the pulled pork(when I cut open the vac. sealed bag it smelled and tasted like it was just smoked. http://i128.photobucket.com/albums/p...2007/017-1.jpg Stir and simmer about an hour or so; http://i128.photobucket.com/albums/p...2007/018-1.jpg |
Biscuits look good, the sandwich look great and the PP looks interesting (sauce and all) I love opening vac bag full of smoked meat and smelling the house up again:biggrin1:
