I took my better half Pompano (aka Golden nuggets) fishing today we caught a bunch & only kept enough for dinner...marinated in lotsa garlic, evoo, Old bay, lime zest & juice, got the grill super hot (for a Weber) skin side down w/ skewered Thai satay shrimp, grilled asparagus(evoo & s&p), & Spanish rice.....

Wow, I love Pompano. Amazingly enough, it's hard to find at Florida restaurants when the wifey and I head down to Destin. I've asked about it, and even though you can catch them right off the shore, they all get their fish from major distributors and there isn't a big demand for Pompano.
There is a whole foods here in Atlanta that has fresh whole pompano now and then, and they will filet them right there for you. Great fish, and even better looking pics! |

ARGH!!! you cut the head off!!! You're supposed to cook pompano with the head on! <at least that's what the old pirate florida cracker to me one time....>
