Bellingham Marine Party

Seeing as how I was "promoted" to "grill manager" by Big Brother Smoke while he was away handling another gig on Saturday, I have been nominated to also report on the party. OK, actually I was bugging him to get a report done, as I was real happy with this one.

Saturday we did a party for 330 for Bellingham Marine at the Channel Islands Marina in Oxnard. It turned out that they had more in the range of 175-200, but it was a great party anyhow. I, with the awesome help of BigMista and Cliff, cedar planked 175 lbs of CoHo salmon. The salmon was prepped with a light dusting of his "chicken rub" (sorry, don't know what he's really calling it, but it's damn good on chicken!). This salmon was superb. We had several folks from Washington say it was some of the best salmon they had ever eaten.

One particular compliment that stood out came from a lady who said she and her husband had lived in Bellingham, WA for 18+ years. They have a group of Native Americans that have been cooking cedar planked salmon for them for almost all of the time they lived in the PNW. She said this salmon was easily as good, if not better, then what is prepared by the locals! Hot Dawg!!

The entire event was run Saturday by BBS's right-hand gal, Jamie. She did a fantastic job coordinating everything, and was quite happy to leave the cooking in our hands, which made this an extremely easy event. Bellingham Marine wanted to feel as if they were part of the crew, so they provided all of us with their company polos and helped out around the event. I had plenty of help from the Western Region Manager, who said he felt at home on the grill.

All in all, this was a great event. The staff had a great time, the clients were extremely pleased, the food was top-notch, and hopefully BBS can rest a little bit easier the next time he has to send his crew on a job without him! :icon_cool

Enjoy the pics here.

Man, sounds like a great time. I was going to drive down and help with that one too. But last minute work and family issues kept me from doing so.

Dang, sounds like I missed a great learning experience.

Bigmista 09-16-2008 01:51 PM

Yeah, it was a learning experience alright. BBS decided to test us since he wasn't there. He left certain things out of the things we packed. Like food service gloves. Utility knives. Brown Sugar. I guess he wanted to see if he could trust us. Either that or he just forgot.

We perservered though and pulled off a great event. Thanks for using us Steph!

Yeah test my arse, I farking put the missing stuff in my box for the other job:biggrin:

You guys did a tremendous job without me! I was nervous as fark about not being there, I was up every morning for a week at 4:30 am. Pepper was not even up for his morning leak. Damn dog must have thought I was losing it!

Hey Country the rub is called "Simply Marvelous Poultry Rub".

I should have known things would run smoothly! Jaime had the tablescapes down better than I would have done them anyway.

Country's suggestion about the Cedar Planks was on point, thanks!

Yes, we have a "Dream Team" thingy going on!

Doing two events at the same time is nerve wrecking, but so rewarding at the end.

Got everything washed and now time to reload for the wedding this weekend. I may not show up again!

HB-BBQ 09-16-2008 02:31 PM

Wow sounds like you guys had your hands full. That santa maria grill is sweet, looks like there was plenty of room for all of that salmon.

Countryhb 09-16-2008 03:11 PM

Not even close to enough room for all of it. I was able to run 40 planks per side for a total of 80 planks at @ 1 1/2 servings per plank. Almost three full rotations to finish all that fish...

Bigmista 09-16-2008 03:13 PM

At least you had the sleevy things to protect your arms...

HB-BBQ 09-16-2008 03:24 PM

I guess I need to learn to count better huh.

Looks like you all did an excellent job!

I do like the idea of using the cedar planks for the salmon fillets. Might hafta try that one!

Professor Salt 09-16-2008 08:55 PM

Good lookin' salmon. Wanted to help out at this gig, but I was pre-indisposed. Will be alter-occupied again this weekend too, dammit.

Bigmista 09-17-2008 12:54 PM

Pre-indisposed? Alter-occupied? Shu are you creating your own language like Barbefunkoramaque?

Professalternate mod.

bbqbull 09-17-2008 03:26 PM

Thats a lot of salmon to cook, its looks very very tasty.
Great job to all the folks who cooked that event.

Garth57 09-17-2008 06:38 PM

Can't get much better than cedar planked salmon. I grew up in Bellingham, WA. and attended many "Potlatches" on the indian reservations. They would have dugout canoe races all day and cook salmon later on. Whenever I go visit in the summertime, friends that fish in Alaska bring out salmon and cook on a screen staked out over hot bed of coals. Takes quite a few brewskies to get thru the day. Your event looked great!!

Norcoredneck 09-17-2008 06:50 PM

Looks like you guys might be getting your Chit together. It was the Crocs that pulled it off.
Sidenote. Hey Country speaking of Crocs. it's Wednesday.
