Brisket... Meatloaf... Mmmm...

When you get a crappy brisket with a thin flat, what do you do? You grind up the flat. Usually I do burgers with it, but today it was meatloaf. About 3lbs. Onions, bell peppers, garlic, egg, panko bread crumbs, Uncle Chris's steak seasoning & some of Brethren cpw's Yes Dear Red Sauce. Into the FEC at 180 for a few hours, then bumped it up to 250.

Glazed it with some Yes Dear super secret competition sauce that doesn't have a name yet... Chad, that is some kick ass sauce!

Some mashed taters n mushroom gravy... Good stuff Maynard!

I got it from Brethren cpw. Not sure if he's publicly selling it yet. I'm not a big sauce guy, but this is some GOOD stuff. His Yes Dear Red sauce is killer too. Available from the Atlanta BBQ Store.

Yes please Andy.

Beautiful meatloaf, Andy!

We save all of our brisket trimmings during the competition season and grind them for meatloaf, burgers, etc.

sleebus.jones 11-12-2018 06:40 AM

Oh man do I love a meatloaf off the smoker. Nicely done!

cowgirl 11-12-2018 12:41 PM

Great looking comfort meal Andy! Looks delicious!
I like to grind up brisket for burger too when it's on sale for $2. and under. Cheaper and sometimes tastier than regular burger. :-D

qnbiker 11-12-2018 03:09 PM

Weird. The last two things I cooked on the smoker were brisket and meatloaf. You cooked them both at the same time!
