Brisket... Meatloaf... Mmmm...
When you get a crappy brisket with a thin flat, what do you do? You grind up the flat. Usually I do burgers with it, but today it was meatloaf. About 3lbs. Onions, bell peppers, garlic, egg, panko bread crumbs, Uncle Chris's steak seasoning & some of Brethren cpw's Yes Dear Red Sauce. Into the FEC at 180 for a few hours, then bumped it up to 250.

We save all of our brisket trimmings during the competition season and grind them for meatloaf, burgers, etc. |

I like to grind up brisket for burger too when it's on sale for $2. and under. Cheaper and sometimes tastier than regular burger. :-D |
Weird. The last two things I cooked on the smoker were brisket and meatloaf. You cooked them both at the same time!
