Chicken Leg Quarters & Zucchini Pron
After eating a lot of beef ribs, baby backs, spares, and pulled pork the last couple of weeks my wife asked for a weekend of a little healthier cooking and just chicken and fish for the protein. Today's chicken cook consisted of 4 leg quarters seasoned with the Rub Co's Hot Wing Rub and either Simply Marvelous Cherry Rub or Big Butz Chicken Dust.

Great looking meal John... I've been eyeballing chicken leg quarters lately at the store and this gives me good reason to pull the trigger. Also love zucc on the grill, but have never tried the balsamic route. Time to do that too!

It was simple enough for me to not mess it up & mild enough for my MIL's tastes. I substituted Parmesan & Romano as it was a "what do we have in the fridge?" mod. |
