Thermapen saves the day

Well I decided to try a prime rib on the UDS for Christmas. 11 lbs. 5 rib choice prime rib. Pit temp was 250. At a little over 4 hrs My Maverick was reading 120
internal. Well The bride had gifted me with a thermapen that morning so I had to check it out. WOW the pen read 105. 15 degrees cooler. Had I believed the Maverick, I would have been serving raw meat to my guests. Anyway I let it go to 120 on the pen, removed it foiled and let rest 30mins. Fanfreakintastic. I know I should have taken a picture, but I was into my third Bloody Mary so forgive me. Going to check the Maverick today. I had checked it in boiling water when new but not lately, so I can'y explain the difference. Viva the pen.
