If you want to cut your own out of NSF approved raw stock check out U.S.Plastics. A skill saw & belt sander will do the job great.

If you are catering the "Cut & Toss" disposables are pretty hard to beat. I believe their website is www.cutandtoss.com

If not just Google "Cut & Toss" and you will find them.

We use them at competitions. They come in different sizes.

I got a pretty big cutting board at Sam's and noticed two nice sized boards at GFS last time I was in there. Like PorkQPine said, any restaurant supply will have any size you want. I had a 6x2 footer at my butcher station.

They are less expensive than some of the other vendors out there. Postage is expensive no matter whom you get them from.

I absolutely love my disposables; it's one less thing to clean up after a long night of smoking and then serving the next day. Also, no matter what cutting board I use I put a piece of the foam shelf liner underneath the board to prevent it from sliding around.

We use cut n toss when we cater. No worries of cross contamination. The sink on the rig can only hold so much water, so if we waste it all on cleaning cutting boards it's gonna be a messy drive home. We do use Boos Blocks cutting boards for carving stations.
