I decided to have a go at making my own doner kebab....the recipe is :
500g Regular Lamb Mince
500g Lean Lamb Mince
60g Kebab Seasoning
What I did is :
Pre chilled the mince for half an hour in the freezer.
Put the mince and the seasoning into a food processor and blended it until it was a sticky lump.
I then oiled my hands and transferred the mince to a piece of clingfilm....I probably won't oil my hands again as some got into the mince and stopped the meat sticking together completely, it was no biggie but I thought I'd screwed it up at one point during the cook but it was all good in the end.
Anyway, I digress!
I then moulded the mince into a log making sure I got as much air out of the mince as possible and put it into a loaf pan with a carton of passata to act as a stop.
This then went into the fridge for 24hrs to firm up.
The grill was lit using some briquettes I had lying around and some cherry wood.
I don't have a rotisserie, so I just used some tongs and a spatula to turn it, slicing off strips as it cooked.
