Done on my 22 1/2" OTG.

Sauteed onions in advance of the cook.

A shell steak is the cut adjacent to the fillet Mignon. It is also called a NY strip steak.
It is common here on Long Island, and is really tasty!
 
Spinalis Dorsi.The outer part of a Ribeye.but,,,those look more like rib eyes.Just an observation.I do not see fillet in that pic.
 
we also call them n y strip steaks. i buy the whole loin and cut them 1 inch thick . It only makes sence . Buy the steaks seperate and they are 6.95 a pound. Get the whole loin and it is 3.95 a pound . Your going to eat them anyway :wink:. And yes we do a lot of them .
 
Outstanding. I tried that beer two weeks ago when I was in Tennessee. I really like it, but can't get it here in Wisconsin...:cry:
 
Very, very nice, Bob! Looks absolutely scrumptious. That's a pretty good sized kettle.
