Planked Salmon, Butternut Squash, and Bruschetta!
Mrs. Brisket requested bruschetta and some salmon. Who am I to say no! Besides a little planked salmon on top of some bruschetta is a really good combo!
Saw this thing at Albertson's. Was tempted to try it, but I'll wait till they drop the price a bit more. There's a fire starter wedged in the center. Says its Birch! The other mixture is the citrus glaze I'll add to the top: parsley, capers, pomegranate, lemon and orange zest and juice, garlic, salt, pepper. IT WAS REALLY GOOD!! Like most people, we though acorn, butternut, and spaghetti squash were just............holiday table decorations! LOL!! The pomegranate had a nice pop and worked well with the parsley and capers. It was a big salty vs. sweet flavor. I also added some coarse mustard. I forgot to add that. It added flavor too. It was a great combo with the bread, mozz, and the tomato and basil!
