Al Pastor on a Rotisserie??
 
Hi All
I was thinking of given Al Pastor a try on my rotisserie. I using a sliced up pork butt,3-4 lbs
I got 2 questions.
1. Can this be done, using the rotisserie?
2. Is there Al Pastor marinade that I buy in a store?
3 Is there a quick one I can make? Quick one= without too may ingredients, that I may have at home..

1. Yes, it can be done on a rotisserie.


2. I have not seen a store bought marinade for Al Pastor


3. Not sure what you have on hand, so hard to determine if there's a quick one you can make. :)

And the marinade recipe:


Al Pastor Pork Marinade


3 guajillo chiles
2 ancho chiles
1 bay leaf
1/2 cup orange juice
¼ cup white vinegar

2 cloves or ¼ tsp
1/2 teaspoons cinnamon
2 cloves garlic
2 1/2 tablespoons salt
3/4 teaspoon fresh ground black pepper
1/2 teaspoon Mexican oregano
1/2 onion, peeled and sliced thin

2-3 pounds boneless pork butt, sliced as close to 1/4 inch as possible


Combine two cups of water, the dried chiles and the bay leaf in a large pot and bring to a boil. Simmer for 5 minutes, and let stand until soft, about 5 minutes. Drain. Discard bay leaf, seed and stem chiles.


Put softened chiles in a food processor with the orange and pineapple juices, vinegar, cinnamon, salt, pepper, garlic, oregano, and one sliced onion. Puree until smooth.


Pour the marinade into Ziplocs or a sealable container add the meat and toss to coat. Refrigerate 24 to 48 hours.

I sliced a Boston butt when I tried using a horizontal rotisserie. I even tied some strings around it to help secure it, but found that once it got a ways into the cook it started dangling and then have bits fall off. I am not sure if I used pieces that were too big, did a poor job securing it on the spit, or what but it wasn't very successful. I would like to try it again sometime but need to use a different cut of meat that doesnt fall apart as easily or figure out a better way to secure the slices onto the spit rod. I've never seen premade pastor marinade locally, but that isn't saying much either.

Thanks for the fast reply..I'm not sure I will be able to get them Chiles around here. Yours looks pretty good on the Rotisserie.

I bet you can - typically they're packaged and sold dry/dehydrated. I dont think I've ever seen one fresh but they come in clear plastic bags here.

This is how they typically come packaged, Amazon has them but they're a lot more expensive than I can buy them for locally...gotta pay for that free shipping afterall.

Traditionally it is done on a Spit with pineapple.
Cumin seed, clove and oregano... guajillo, ancho and pasilla chilies some white onion garlic splash of cider vinegar lime and salt. Blend it, marinade in it for a day or two. Add pineapple At the spit. Throw a couple Chile de įrbol if you want some heat

Hi All I've seen some large amounts of dry Chili peppers in restaurant depot.Ust looking to try a small batch and see if my better half likes it? Will look around for the dry Chilies.

I used this one and it was quite tasty.

I did have to order the achiote paste from Amazon.

A good trick in this one is to layer the meat in a container like this one.

After marinating, I placed one of the pineapple slices on top of the meat in the container, inserted the skewers as far as I could and then inverted to remove the container (Might want to run a knife around the inside to break he seal so the meat comes out easily). Then just add the other slice of pineapple and push it all together. Comes out like this.

My wife does not eat pork so I tried chicken and beef. I also just placed them on the WSM for a few hours.

There are several Mexican supermarkets in bergen county. Just google it. Mexi-mart I think is just a generic term

If you have a Latinx (Mexican, Hispanic, Latino) grocery store near you, you can. You also might check the end caps in the produce section. Lastly, look for them in the spice section in clear bags with red or green trim.

And if that doesn't work, send me a PM. I'll get them out to you.
