Wild boar bacon and Hunter sausage PRON
Good day brethren,
Recently I got my hands on some wild boar belly so what else to do but bacon. There is a small grocery store that has a meat dept and my bro knows the butcher there. My bro called me up and said that he picked up a whole pack of wild boar belly for $2.99/lb. Here it is https://lh6.googleusercontent.com/-g...513_224512.jpg It was so tender that you can literally fold it https://lh3.googleusercontent.com/-i...513_224537.jpg https://lh3.googleusercontent.com/-f...414_115049.jpg The cure process begun https://lh5.googleusercontent.com/-L...513_231916.jpg In the mean time I decided to make some Jagerwurst (hunter sausage) https://lh4.googleusercontent.com/-G...423_164316.jpg Stuffed it in hog casings https://lh4.googleusercontent.com/-P...423_164306.jpg https://lh4.googleusercontent.com/-r...423_164320.jpg https://lh6.googleusercontent.com/-t...504_161927.jpg Let it "hang out" for a bit  https://lh5.googleusercontent.com/-1...423_174940.jpg https://lh5.googleusercontent.com/-m...423_180539.jpg Time to hot smoke them.
