Chicken halves on the Performer
 
Was going to just spatchcock the chicken but then we had an idea. Half the chicken and use two different rubs for two different purposes.
Both halves marinated overnight in Italian Dressing and a sprinkle of salt.

Chicken-half on the right is little bit of s&p, lot of Kickin Chicken, and McCormick Grill Mates BBQ seasoning. That's just for tonight.
Chicken-half on the left is just garlic salt and pepper. Going to shread it and add to my wife's marinara sauce for spaghetti tonight. Her sauce is out of this world.

Got the performer fired up...little too hot, but still working on how to bring my temp down with the bottom vent.

Little sear then indirect. Prob didn't need the sear since the skin is already beat up from de-feathering it.

I got a bit distracted by bath time/a 5 month old/ect... came down to see the skin had really started to burn after I flipped it skin down. Thought I ruined dinner (2 of them) and was ready to kick myself. Turned out to be VERY good. Wings were too burnt to do much about, but the skin was actually really good. Not perfect, but more than edible.

He prefers pepper heavy rubs just like mommy and daddy. That's probably why mommy came home and asked, "Why is all this salt all over the floor?" :grin:
He adjusted my rub recipe by just "dropping" what he didnt like. ha
