I am looking around for an affordable yet high volume cooker. My current pit, while big enough just doesn't cut it for the cooks I've been asked to do lately.

Turned down a gig where they wanted me to cook around 1000 wings...

Had to do two shifts of cooks on my last cook ... 10 pork shoulders and 16 chickens - just not enough room on my R&O. Plus its a lot of fire tending.

So I am looking for something with a more forgiving fire management and something that can handle larger volumes of food.

I am looking at a Pitmaker Vault but again I'm still reading up on how its fire works and how much it can handle at a time.

Not sure what your budget is but my pit was around $3000 (with several up grades) and it will hold as much food as a Lang 84!:-D Here's my cooker's model on video.

It's a great pit, fuel efficient and has a crazy cooking capacity!

oldbill's LSG would give you the ability to cook a few different ways all in one unit but still has you managing the fire...holding, smoking, grilling, searing, slow and low in offset with H&F in the vertical, etc.

With a set and forget / less hands on style cooker, you will be more limited to one style at a time.
 
A couple mirror-image LSG insulated cabinets mounted side-by-side on a trailer would be cool. That would get you the capability to cook 24 briskets or 48 butts at once, and only two fires to manage. One ATC could handle it, and you could run two different temperatures.

Or if you want to go stick burner, Shirley Fabrication can make some awfully big cookers. Check out the 30x88 and the "block model".

Insulated cabinet smokers are your friend. Small foot print, large cooking capacity and "set it and forget it" fire management.

I would consider Lone Star Grillz as well. Awesome smoker with great features.

You wont be disappointed. The customer service is top notch. Also, the owner Chris has been watching and providing helpful hints into a thread on this forum.
 
Yup side by side or back to back insulated cabinets on medium size trailer :thumb:

Or a custom jobber - 2 insulated Cooking boxes - sharing middle wall over one large Firebox with adjustable damper/difusser between the cook chamber and FB so 2 different temps achievable. :mrgreen:

The Pitmaker is more expensive than the LSG, but IMO the Vault is really an overbuilt insulated cabinet smoker. It runs on the reverse flow principal, so the top rack runs the hottest. I also like the fact they use a lot of stainless in their pit, like the water pan, smoke stack. I could be wrong, but the plate behind the grates looks like stainless also. At first I didn't like the pit because it ran hot, but after learning it, I use it all the time for my larger cooks. I guess you get what you pay for in this incident.

I'm in West and have Pitmaker Vault I might be selling. Buy local and save done cash over new. :)
 
Look at Backwoods Piglet Plus. They are in Shreveport which is not far from you. Several catering guys and a couple of small restaurants running them around here. 1 shelf will hold eight 8-9lb pork butts. Has dual exhaust drafts so it pulls air from both sides of the cooker for even cooking, expanded metal shelves, stainless doors, commercial fire box. About 500 lbs so heavy but not too bad for a cooker with that capacity. They are priced between $4.5k and $5.2k depending on the set up.
 
Here is my 5 rack set up. 5" centers. Mounted on a small 5x10 trailer for size reference
