Prime brisket is what I go for but beef ribs aint bad either. http://img.tapatalk.com/d/12/12/04/6u5emama.jpg

What is the long cut short rib called? Here in Hawai'i we usually get da kine kalbi style flanken. They don't take too well to smoking. Could use some guava ribs right about now.

I don't know what guava ribs are... but they sound tasty:grin:

RD has pretty darn good beef ribs up here in MN. You might see if there is a location near you. I have them on my specialty menu as "Dino Ribs".

there's definitely a Restaurant Depot in houston. Go there!!! you'll be glad you did. the meat selection is phenomenal!!! i was at a virginia store today and saw some beautiful dino ribs. now i'm regretting not getting some.

+1 for RD. they usually have the "plate" ribs. They are my favorite BBQ.

Yup those ribs AustinNight shows are what you want. Pricy but fantastic, cook them long enough and like a properly done brisket they will melt in your mouth. They go by different names too down here depends what butcher you are at. My local Sams sells them but only by the box. $$$$

I doubt I'll be seeing ribs like that unless I cut my own!

Yup. I've been once, and was like a kid in a candy store. Loved the ginormous meat cooler section.

Are they marked as plate ribs or short ribs?

I think there is still hope down here. I knew a few butchers when i lived in the Midwest, but sadly none here in Houston. Not yet at least.

I've always had good luck from our butcher. Here are some American Wagyu Beef ribs.

This isn't something you get to cook everyday, but when your meat supplier wants to go big-we go big!
