Smoked prime rib, crab stuffed mushrooms and scallops
Here is a past cook we did and thought I would share in case someone is looking to do a Prime Rib a little different.
Started with a 13lb boneless Rib-Eye Roast. Cut about 1/3 off for the prime rib - rest of it got packaged for the freezer for another occasion. http://img696.imageshack.us/img696/5051/img5573ox.jpg Here it is all pumped and rub down with a package from Curleys Sausage Kitchen. http://img818.imageshack.us/img818/5750/img5576a.jpg Onto the Yoder at 170° for a couple of hours - smoking with hickory pellets. http://img594.imageshack.us/img594/3775/img5578k.jpg Tried my hand at some crab stuffed mushrooms - cream cheese, minced garlic, crushed croutons, melted butter and seasonings. All mixed up and stuffed... Also had scallops on with butter, minced garlic and some cajun spice. http://img267.imageshack.us/img267/7687/img5603g.jpg Removed the Prime Rib when it was reading about 115° - doing this because I am grilling the Prime Rib with the grill grates. Cut the roast into 5 thick steaks. http://img33.imageshack.us/img33/3218/img5612qr.jpg First side hitting the grates..... http://img254.imageshack.us/img254/745/img5622r.jpg Flippy flip.... http://img703.imageshack.us/img703/5274/img5621k.jpg Plated http://img706.imageshack.us/img706/3103/img5674l.jpg PERFECT for us!!!! http://img600.imageshack.us/img600/9207/img5668h.jpg Enjoy!!! |

Did you take it straight from the smoke to the grill, or did you let it sit for a bit before? |
