Catering a wedding party dinner tonight for 50. Pulled pork, Brisket, Chili, Cornbread and Green Salad. I am good on quantities on everything except the green salad, our customers don't usually order it.
I was thinking maybe 6-8 lbs of salad greens, plus the other veggies going in the salad. Does this sound about right? Too much, too little?
