Well, some of you know that I've been stuck without a smoker or grill. I had a great idea for this throwdown also, and just didn't know what to do. During chocolate and churros tonight ecode suggested building a UDS. The neat thing about having a very talented wife is that she is able to whip together a UDS in a rather short period of time without any tools at all! In just a couple hours she not only built a UDS, but we had a throwdown entry all ready for submission! Granted, it's not a full-sized UDS. It may in fact be the smallest UDS in existence. The first job (and about my entire contribution) was getting a suitable drum. This I managed to do without too much difficulty. She even opened up the drum to get things prepped:

There was no room for a charcoal fire, so we improvised. I know some of you are thinking, "at least it isn't gas!" Others are thinking, "at least it isn't an Optigrill!"

Using a Kinder Eier mit Überraschung is just brilliant. I love those things. They are so hard to find here as they have to be imported illegally.

This is my first throwdown entry, so here we go. A friend of mine brought over some fresh basil and tomatoes from his garden on saturday and we made some pizzas. There were some leftovers on Sunday, so I made some stuffed portabellas on the smoker. It was 103 degrees here, so I went with the gas smoker to keep my time outside to a minimum.

Started by putting some ricotta in the shrooms

Made a mixture of lump crabmeat(the surprise inside), the tomatoes, basil, a little heavy cream, salt, pepper, and crushed red peppers. Added this to the shrooms

Added some fresh mazarella

Threw them on the smoker for about an hour and a half on 200

Added Bread Crumbs and put in the broiler for a few minutes to get some crunch.

Ate with some creamed spinach. Unfortunatly I took all the pics with my phone so they didn't come out great. I guess use this last one.

It looks like a legitimate grill to me! How did it taste?:becky: I'm thinking about some mods for a UBS of my own. My wife has some vanilla scented candles...could make for some tasty grilled desserts.

Taste? The cookies are good, but KinderEgg chocolate has a greater percentage of wax than the candle. I think it would be a nice idea for a dinner party though to give everyone their own UBS at the table.

So, my wife wanted me to do something "healthy" this weekend. I did a brisket instead :heh:.

BUT since I didn't want to sleep on the sofa for the rest of the week, I decided to try a healthy take on a Fatty.

I diced up and sauteed some peppers, onion and garlic in a little EVOO and rolled it up in seasoned ground turkey breast.

Smoked it for a couple of hours next to the brisket and it turned out fairly decent.

After my wife tasted it, she said, "Huh. I like the peppers and stuff inside... I'm surprised!"

I have to say that that smoker is probably one that Sharon, BHSLH, will let me put in my arsenal without getting rid of one of the others.

My Big Fat Greek Cheese Wheel
 
For my Throwdown entry I present to you the Big Fat Greek Cheese Wheel. The complete thread can be found HERE.

First I made a 2 1/2 lb. 12" greek lamb burger with shallots, garlic, fresh thyme, rosemary, oregano, black pepper, and salt. I smoked it at 225F for 90 minutes with olive wood chunks.

Next I cut a 1kg (2.2 lb) 12" brie wheel in half with dental floss.

On top of the halved brie I added the lamb burger and smoked thin Bosc pear slices.

Next I wrapped all in a puff pastry, eggwashed, and put on a 400F grill indirect.

It came out beautifully golden brown and soft. It was melty, rich and smokey good. The lamb, cheese, and grilled fruit complemented each other perfectly. We served it with grilled apricots, grilled artichokes with lemon aioli, and grilled lemon and rosemary Greek potatoes.
