Need help chicken leg quarters
 

I am planning on smoking some chicken leg quarters for a kentucky derby party I am having. I was thinking on an average of 2 per person. Is that about right? Also a case is sold by the pound, 40lbs in a case, whats the average number of leg quarters I should expect per pound or per case? I was guessing 1.5-2 per pound but I wasn't sure. Any help would be greatly appreciated.

I think leg quarters are around 1/2 to 3/4 lbs. Should be able to feed 40 people with 40lbs. with sides and all... That's my guess.

I would guess that the case weight would be around 1 leg quarter/lb. If you break down the quarter you get a thigh and a drumstick so if you guess 2 per guest that would = 4 peices of chicken per person. I think thats about right for bigger guys but most women wont eat that much.

If I were you, I would try to avoid Sanderson Farms on this. Every bag of quarters that I have ever gotten from them is VERY inconsistent. You regularly find tiny and huge quarters in the same bag.

Marshall Durbin is much more consistent in my experience. They will also be inconsistent sometimes, but nothing like SF.

If you can find them, Cagle's Brand is my favorite. They are on the smaller side amd very consistent, but priced about the same as the others. You usually see Cagle's at stores that get their groceries through AWG.

I found your comment on the Sanderson Farms brand interesting. My go to grocery carries that brand exclusively. I buy 10# bags of them when they go on special and they are usually spot on at 1# each/10 per bag. I have never gotten more than 11 quarters in a 10# bag.

Another local grocery carries a brand called Country Pride, and I have had as few as 13 and as many as 19 quarters in a 10# bag.

I bought 2 bags of the Sanderson Farms last week. Paid $4.90/10# bag.

It depends on the size of the chickens, so be sure to read the label. I have gotten 40lb cases of 'fryer' quarters that had 48-54 pcs in them. I have also gotten cases of larger chickens quarters that had right around 40 pcs per case.
