smoked meatloaf w/ bacon lattice
I've got a couple 4 lbs meatloaves(?) on the Bubba Keg right now... I roasted anaheim chiles and grilled vidalia onions, then chopped them up, adding ground chuck, ground sirloin and ground pork, eggs, bread crumbs, italian parsley, basil, oregano, rosemary (all from garden), then stuffed one with cheese, and put a bacon lattice over the top of each of them.
I'm using pecan chunks and Humphrey charcoal, at about 250 degrees. i was at dlm on 48 after work and they were grilling out at the front door. i say "you aren't grilling with gas, are ya?" they were. i pointed to the pallet of cowboy charcoal and said "you should be using that lump charcoal" they said "we'd have gone through too much if we were using charcoal." it still smelled good. they got good beef. :biggrin: i need to take some eggs down there |

I suggested the idea of smoked meatloaf to the boss and she said no. Shs's not a fan of my experiments. But I would love to try that. Anyone want to invite me over for dinner?

She had 3 slices of meatloaf, which is more than I've ever seen her eat, and I sent home about a chunk of leftovers. I think the secret to this one, which was the best I've done to date for meatloaf, was the addition of grilled onions and roasted peppers, and, especially, the really fresh herbs (and not being shy of using them!) The bacon didn't hurt, of course. :) |
Very nice, I smoked a meatloaf on Thursday night didn't even think about wrapping it in Bacon!

Hey Curt- I started my UDS at 5 this morning, mixed up a meatloaf, gave it a coat of bacon and its almost to temp. I'm off to work in half an hour but we will eat well when I get home. Thanks for the inspiration!! I'd share photos but my camera is touring Tn. right now.

dlm canceled the upscale pizza class last month. i almost cried. they said they would have another one in the fall. that is how i plan to get my foot in their door. where's the plated shots, eh? :biggrin: |
plated shots coming this evening.
Cooking classes are taking a hit right now, with low attendance. We were lucky to not have ours canceled last week; only 9 people on Tuesday, but it doubled by Saturday. |
