Smoked Butt on T-day

Well, that isn't all, but I forgot to get pron of the smoked turkey breast, and the smoked baked beans!
The Butt took 10 hrs at 300 degrees..... the smoked breast and the beans went for 9 hours.

I'll take a photo of the others when I warm them this morning.

The main Turkey is Deep fried injected with Creole seasoning.

The Acu Rite probe Thermo, was a recent purchase at Academy, and for as cheap as they were (9.99) were trouble free, and I had one in each of the two meats, since I wanted the turky breast off at 174 deg and the Butt to run to 205 deg.

BTW, I used the Mexican produced lump charcoal that Sam's Club was selling a month ago. It performed pretty well, with the exception, at the midway point the lump needed to be stirred a little to get the coals to get in contact with more of the other unlit lump...It went down to 150 deg for about a half hour, before I could get it back up to 300 degree. My impression of the lump even though that happened, was the temps were easier to maintain a higher 300 plus temp.....It had a fair amount of large pieces with the usual smaller pieces and dust. It was a good mix of the sizes. I I thought the smaller pieces would fill the voids and feed the lighted coals to the next bigger pieces by fitting closely to the different sizes. But that didn't evidently happen since I had to shke up the the mix and get the heat going again. Other than that the heat once it was going at 300, stayed there, and cruised right along.
