It depends on the situation. Early on I would always include "rental/usage" fees in with my quote. This made the meat seem more expensive. Now I break it down seperately, as most people don/t fully understand all the materials they will need to have, if they just want to buy the meat and try to put together a buffet line on their own. This way has worked out better for me.
