Holiday Smokin' (belated) -- PRON HEAVY!!!
So I was a good boy and took lots of photos of the cooks at Thanksgiving, Christmas Eve, Christmas Day and New Year's Eve. I've just been too lazy to post them......UNTIL NOW!!

Turkey was brined for 24 hours, breasts iced down while rest of bird was brought to room temp. Pulled at 140, had to hold in a warm oven for a couple of hours (BIL was late.....AGAIN!!) but it still came out great. My dad had to have his "burnt" in the oven :eek: cuz it was WAY to red for him. Whatever. His loss. One was rubbed with KC's rub (I really like that stuff.....I think it's the celery salt) and the other was with a spicy rub from a recipe I found. http://i239.photobucket.com/albums/f...n/IMG_4895.jpg Cooked at 325 until internal temp was 155. http://i239.photobucket.com/albums/f...n/IMG_4897.jpg One was a few pounds heavier, so I put it on 1/2 h later than the first, and they were both done at the same time. Ingredients: 1/2 cup Brown sugar (sifted) For Brisket reduce to 1/4 cup 2 Tbsp Hickory salt 1 Tbsp Celery salt 2 Tbsp Accent 2 Tbsp Onion powder 2 Tbsp Garlic powder 1 Tbsp Chili powder 1 Tbsp Paprika 1 Tbsp Black Pepper Cooking Instructions: Combine all. Rub. This rub will work on anything, but is especially good on pork. Heat on this rub is quite mild. Substitute 2Tbsp of Tony C's (or Tony C's extra spice) for 1 Tbsp of the hickory salt and 1 Tbsp of the Accent to "kick it up a notch" OR Add 1 Tbsp Cayenne pepper. The only thing I've not been able to find for some reason is hickory salt. I've been using a hickory flavored seasoned salt, which has a pretty strong hickory flavor. Seems to work well. If I had Plowboy's recipes, I'd make them at home too, but....such is life. Until I order some more Yardbird and Bovine Bold, I'll keep mixing KC's. Not AS good, but still.....I like it a lot. |
What an amazing meatfest! BTW, which rib roast did you prefer, if any? I never thought of putting dill on beef before....
