Slow Oven Baked Pork Chops
 
I do most all the cooking at our house these days. The family likes my Pork Chops so thought I would post my recipe, nothing special and could be done on the Smoker as well.

Family pack assorted Pork Chops (or Sliced Butt), usually about 10-12 chops

Preheat Oven to 250º

4-5 cans of Campbell Mushroom soup.
2 Packages of Lipton Onion Soup mix
Line large oven pan with foil
Place Pork Chops in a single layer
In a mixing bowl add Mushroom Soup and Lipton packs and whisk thoroughly
Pour mixture over Chops and spread evenly to be sure all Chops are covered

Place pan into oven uncovered for 90 minutes
After 90 minutes remove pan and cover tightly with foil
Turn oven down to 225º and continue to cook for 2 1/2 to 3 hours

As a side prepare some white or brown rice, not minute rice

Spoon Rice onto plate and place Pork Chop and remaining sauce over rice

To make this better, have a Port Shoulder (not Picnic) sliced up at 3/4" thick and use this instead of assorted. This will give you a better tasting Chop. Some assorted Chops are dry to me regardless how cooked.

We used to do pork chops that way every Christmas. One thing we do different is we egg wash then flour the chops, pan fry just long enough to set a crust on the chops then into the soup. My daughter loves them.
