Rasta Ribs, Haitian Slaw and Caribbean Sweet Potatoes

I made this yesterday for the Caribbean Throwdown. I had a lot of fun and my wife and son loved it.

The Haitian slaw has a vinegar based dressing with lots of heat from the habanero peppers.

The ribs were marinated in dark rum for 4 hours then I rubbed them with a mixture of jerk seasonings.

I grilled the sweet potatoes and basted with a rum, brown sugar and molasses sauce.
