Jerk Pork Tenderloin & Mango Chutney
 
We joined a food co-op thing about a year ago or so where they deliver large quantities of produce. We get what they have and we don't get to choose except for the extras. This past weekend we got a lot of mangos in what I call our hippie basket.

So I pulled a pork tenderloin out the freezer and did a quick Google search for pork tenderloin/mango.

Found the recipe for mango chutney and decided to give it a try. The recipe called for mango, tomato and cilantro. I like onions so I decided to add a little bit of a Vidalia. An excellent choice if I do say so.

I marinaded the tenderloin all day in a mix of Italian dressing, a bit of lemon juice and some soy sauce. Of course, pork is better with bacon so I wrapped the tenderloin medallions in bacon, seasoned them with Jamaican Jerk seasoning. (I cheated and just used a store bought container.)

I got the coals hot on the Weber OTG, then cut the heat back to keep the bacon from burning. I placed the tenderloins off the coals to let the bacon cook slowly into the pork.

I opened the bottom vents after about 15 minutes to heat the coals back up. I put them over the coals about 5 minutes after that.

I then pulled them from the grill and let them rest for about minutes while I enjoyed my Johnny Walker Red in my Cyclone glass. Put the mango chutney over them. Pretty simple, but good.

That sounds like a great flavour match to me, too, especially the jerk seasoning and mangoes. I use both regularly but never put them together before. I love the sear and colour on the medallions, they look juicy and delicious. :thumb:

Wonderful looking cook! I've been wanting to make a batch of jerk chicken but maybe I'll switch gears a bit and try this pork tenderloin dish. :thumb:

The soy sauce was new this time. The Italian dressing with some sort of citrus is a staple for pork. It is actually adapted from the marinade the Iowa Turkey Growers Association uses on their turkey tenderloins at the Iowa State Fair.
