Voodoo Garlic Fatty Mod

I saw this done to a prime rib once and figured it might be the chit for a fatty, too.

Cut some garlic into sharp, pointy slivers...

Pretend the fatty is a voodoo doll...

Apply rub, smoke for 2.5hours (next to your first charcoal brisket experiment), slice and serve.

If you're lucky, your wife the HR manager will come home for lunch just in time to get super voodoo garlic breath to share with everyone attending her afternoon meeting back at the office.

Brisket burn-victim story to follow...

I love garlic!....works for me. I do like a lot more stuffing in my fatty's though.

Delicious. And some of the best gas I've ever had. I'm thinking of buying a flex-fuel vehicle...

I think BBQJoe does that at EatAtJoes

I do that with garlic, sliced onion, and bell pepper for pot roast ......throw some more onions bell pepper and garlic on top and cook in foil pan covered with foil in the smoker at high temps (*300 if ya can get it) usually, I use a brisket flat for pot roast!.....makes a hellova gravy when done!!

BTW fatty looks great gotta try that one !

The garlic, or the gas  ?

D.F. Expat 07-09-2007 06:45 PM

I tried something similar but the garlic was a little undercooked, maybe because it was only in the center instead of stuck in like that? I guess it is time to try again!

Yep, we do it!!!
We also roll in granulated garlic after stuffing with cloves.

Chris Nickelson 08-02-2007 03:09 PM

Was there much garlic bite around each or was it fairly even????

Thawley 08-02-2007 03:22 PM

Even, mellow, garlicy goodness...
