Fatty Question
 
Looking to make a fatty out of ground beef instead of sausage. Reason for this is im having a cuban themed birthday bbq. so it would be a play on a cuban piquadillo and stuff it with sweet plantains(already cooked). My question is how to keep it from falling apart, what can i use as a binder so it will hold its shape.

you shouldn't need a binder...I usually make my meatloaf without any, and I don't have issues.
If that's not working for you, try adding an egg, and maybe a bit of bread crumb

I usually wrap my meatloaf in bacon. they are very simple and taste really good
