ABT's with chorizo
 
Has anyone done ABT's with chorizo? Wondering how they turned out. We are going to a "Taco Bar Party" and was thinking about a variety with chorizo.

Any pointers would be great.

What do you think of this for the stuffing

Cream Cheese
Chorizo
4 Cheese Mexican blend cheese
dried chipotle

Other suggestions?

Some have said the chorizo is too greasy for ABT's and was wondering if I should do a different meat.

I've used fresh chorizo inside a fatty before and it didn't seem any greasier, but you could precook the chorizo first to get rid of some of the grease.

That mixture sounds good to me!

My homemade chorizo is not as greasy as JD sausage on purpose and is still very juicy and tasty.

I have thought about using it as an ABT stuffing but haven't gotten around to it yet.

Is chipotle the right spice with this sausage? Will it be too overpowering?

I've made ABT's with chorizo just like what you mentioned minus the chipotle. I precooked it and got as much grease out with a paper towel as possible. They were great, go for it!

So I changed my plan. However, here is a peek.

ABT's.

Cream cheese, barbacoa pork, sweet chili sauce, 4 cheese Mexican blend for stuffing.
