Smoked Pork Butt Green Chile Stew
It is getting cold and actually had some flurries today so decided to make something to warm the bones for dinner.
I started with this http://i1296.photobucket.com/albums/...ps9234e0fc.jpg I roasted the anaheims (sorry for the fuzzy pic) http://i1296.photobucket.com/albums/...ps4828e35c.jpg I chopped up the peppers and onions and sautéed them in a pot with a bit of oil and the garlic. Then added the chicken stock and the pork. http://i1296.photobucket.com/albums/...ps6f752783.jpg Once that had simmered a bit I added the potatoes and some cilantro. http://i1296.photobucket.com/albums/...ps359eea53.jpg I let that go for about 30 minutes until the potatoes were done. I had to stop myself after two bowls. |
