chorizo fatty ?
my winco had these hanging out next to the other fattys , has anyone tried smoking these ? if not . i will be the Guinea on this !

Richard, I can't wait to see this and I wish you all the best. I've only smoked chorizo in a cast iron skillet, and what I find is that chorizo is so finely textured and loose that it crumbles apart super easily, nothing like ground beef.

I have only ever smoked the cured not fresh shop bought chorizo.
I prefer to slice it and either dry fry it in it's own oil or slice it and use it on chicken kebabs. |
I like this idea! You could smoke it up then crumble it into some monterey jack or oaxaca cheese and make a smoky quesos fundido!

I've never made a fatty out of these, but have used this brand of chorizo quite a bit. It's very good stuff.

I have done a chorizo fatty with eggs, hashbrowns and cheese wrapped in bacon, turned out great, did MOINK balls after, lets just say watch out for grease fires AMHIK:twitch:

I did a stuffed one a few months ago, and head the grease warning, look at the pan.
