'Red, White & Blue' Cook

For the spirits throwdown!

Red Wine, White Wine & Blue Cheese were the focus of this cook:

Swordfish Steak marinated in a white wine mix. White wine, molasses, worcestershire sauce, salt, pepper, hella garlic, olive oil, cider vinegar.

Turkey Leg marinated in Red wine mix (was goin' for a coq au vin type thing). Red Wine, molasses, Worcestershire sauce, salt, pepper, garlic, onion, rosemary, thyme, olive oil.

Red wine sauce was reduced afterwards and then poured on top of grilled turkey leg.

Brussels sprouts roasted in goose fat, maple syrup, salt, pepper & garlic. Tossed with toasted pecans, roasted cocoa nibs & blue cheese.

I don't have a grill, so I just stuck a grate from my wsm on top of my chimney. Used mesquite lump charcoal, and some mesquite wood chunks.

Best way to sear fish by far, using the chimney. Turbo heat bro. Jet engine.
 
I can almost here the meat cooking on that chimney starter....and smell that wonderful swordfish. Bet it taste better than it looks. Great Job!!! :clap2::thumb::whoo::
