Rookie smoker here, this forum is a great find and very entertaining!

I'm looking for your favorite dry rub to use on a sirloin tip beef roast and some suggestions on how to cook it. I have a Brinkmann ECB smoke n grill so I was hoping to do it on that today but given its a lean cut of meat I'm worried about it drying out if I cant keep the temp up.

Thoughts and opinions from the brethren?

Montreal steak seasoning works well. Run your pit around 275 and pull off when the Internal temp is about 125. Let it rest for 15 minutes and you should have nice medium rare steak. Should get a nice smoke flavor on the outside. I like to shave thin for sandwiches. If you can, place a drip pan beneath to catch the great drippings. Good luck.

Tri Level

Season Salt
Low Salt Rub for depth
Dirty Dalmatian

And some Rosemary

Thanks guys, I decided to go with: black pepper, cumin, salt, seasoned salt, oregano, cayenne, chili powder, garlic. We'll see how it goes. I'll post some pics later.
