Thermometers
 
Thermometers used for immersion into food or cooking media,(Oil,water,etc) Must be What?

The correct answer is metal stemmed.
Obviously we don't want to take a chance with broken glass contaminating food.

What about those "candy" thermometers I see used?
Seem to be glass casing with a core of something else.

I get confused so easily :redface:

Well since I'm fairly sure that most of use aren't making candy, and I seriously doubt you would jam a candy thermometer in a brisket, It probably isn't an issue.
I'm willing to bet that candy kitchens use more up to date thermometers than those glass ones.
