Buck & Bourbon with Beer Bread

This venison recipe was in the LL Bean wild game cookbook that Brethren Phesant so kindly let me borrow. Thanks again Ken! :thumb:

I used some of the little buck I got last deer season.. cubed some of the backstrap, seasoned with salt and pepper, rolled in flour and gave it a quick brown in oil.

http://i245.photobucket.com/albums/g...c42b475f-1.jpg

http://i245.photobucket.com/albums/g...e11bd7eb-1.jpg

removed the venison and sauteed some onion, peppers and garlic in the drippngs..

added the venison back to the pot, then added thyme, rosemary, 3 oz of whiskey ( I used crown royal) 1 cup of tomato sauce, 1/2 cup of water and a bouillon cube.

http://i245.photobucket.com/albums/g...198aa0f3-1.jpg

It's supposed to simmer until tender so I decided to use my drum with small bit of mesquite...

http://i245.photobucket.com/albums/g...e52008eb-1.jpg

I added some backstrap steaks for a snack...seasoned with a great pepper blend that Phesant also sent...

http://i245.photobucket.com/albums/g...279f1e1a-1.jpg

the steaks were great! Thanks for the pepper blend Ken.. it's killer!

http://i245.photobucket.com/albums/g...519bc187-1.jpg

I decided to make some beer bread..... smoked it in the drum...

I'm not a big whiskey drinker but the sip of Crown tasted soooo good with the bowl of venison and hot bread. It definately warmed me to my toes!:-P

Thanks for looking!

Norcoredneck 10-05-2010 09:20 PM

Looks great!

bluetang 10-05-2010 09:38 PM

Comfort. Very nice.

BlueHowler 10-05-2010 09:49 PM

Looks awesome. The whiskey looks a bit low. I do not let mine get that low until just before my wife says " wake up! you are drunk and need to come to bed!"

Smokey Al Gold 10-05-2010 09:50 PM

That's what its all about right there :thumb: Nice job!

Smiter Q 10-05-2010 09:50 PM

Awesome post.

The L. L. Bean Game and Fish cookbook by Angus Cameron is my favorite cookbook--and I own hundreds of cookbooks.

I have used that same recipe with great tasting results--however your version looks way more photogenic.

The recipe for the Red Wine based BBQ Sauce--that is in that book is a great recipe and we use it often while catering for local wineries. Red Wine from an oak barrel has that "slight" oak taste---paired up with meat smoked over oak coals---the sauce really makes it happen---the glass of red wine in the other hand may help.

The book was out of pRint for a while--but is back in print. I bought a used one at a used book store a few weeks back because my original one was falling apart.

I love your posts and your incorporatin of BBQ/ dutch oven/ down home cookin ----please keep it up.

hamiltont 10-06-2010 10:33 AM

As always, very nice Jeanie!! I can smell & taste it from here!! Cheers!!!

chambersuac 10-06-2010 10:48 AM

Jeanie,
I now think that it is impossible for you to cook a bad meal. Another home run, my friend!

deguerre 10-06-2010 11:26 AM

But...where was the Bourbon in all of this?

:becky: Looks great Jeanie!

cowgirl 10-06-2010 01:39 PM

Phu...Thanks! :)

Thank you Chuckwagonbbq, I appreciate that. I'm used to cooking what I have on hand....what I've raised or gathered from my area.
Your oak barrel wine sounds wonderful! I imagine the Q sauce is fantastic...
I've had my eye on a wine based recipe and plan on using some of my homemade sandhill plum wine or some wild fox grape wine. I thought it would go well with the venison..
Thanks again... :-D

Hamilton, thank you! I would have shared with ya. :)

Dan..thanks! I'm working on the fruit problem. lol

Guerry, you are so right! The only whiskey I had on hand was Crown.. I should pick up some bourbon for cooking. Thanks!

Good luck with the bread Randy! Hope it turns out well for you!
I DO hunt on my own land... whitetail, dove and quail.
My favorite place to hunt is on some land that belongs to some ranching friends. They are so nice and treat me like family..
The part I hunt on is 2,000 acres along a creek...
http://www.bbq-brethren.com/forum/sh...ad.php?t=82328

For me...the best part of hunting is spending the day out there... I also enjoy being able to put myself in a good position to get a shot at a deer. (you probably know what I mean). I like hunting in their territory..
I wait until the last few days of the season to get one so I can prolong the fun. lol
If I don't get one out there, I have been known to shoot one from my front porch. :-P

I imagine you have some awesome deer in your area!! Hope you have good luck this season. :thumb:

bbqhead 10-10-2010 03:07 PM

I only have 10 acres up north, The neighbors asked us not to hunt my property. So they let us hunt over 300 acres on different propertys. My land is a birthing ground for the does. We can take 1 Buck and I think 2 does. I got a nice creek on the backside of my land and always tons on tracks back there. Cant wait to get back up there!
