Fired up ECB with new mod up last night. Held around 235* for about 4 hours. Threw on a whole chicken to smoke. Took about 3 hours.

Rubbed down a 5lb brisket last night. Wrapped and left in fridge over night.

Got it on about 9:15 this morning. Had some early heat issues, but under control now, cruising around 212* currently.

Buddy of mine bought a new Char-griller Pro with the offset at Lowe's yesterday. Figured we might as well christen it with a nice 8lb butt.

Here are the butt and brisket from Memorial Day. Long day but lots of fun! Brisket was just a bit dry, but I think I can fix that and I didn't get as nice of a bark as normal....not sure why.
