Propane or electric for Concession?
 
So we have been doing weddings and other catering and have decided to do some festivals, fairs and street vending. We have a commercial kitchen and transport everything to the site done or finish/serve now.

Anyway, we are ordering our trailer and I keep waffling between running mostly propane appliances or electric.

Appliances will be:

72" under counter fridge
Standard stand up freezer/fridge
30 gallon fryer
24" griddle
4 burners
3 table top steam tables
Food lamp

So I am tempted to run as many propane appliances as possible to be mobile without the giant generator (currently have 2 Honda 3000's).

Any advice on propane, electric or anything equipment wise is much appreciated.

My personal preference would be electric refrig and freezers and gas everything else i could get.

HBMTN has it nailed. The least you use generated power the quieter you are and much more efficient. Never trust a venue that says they have plenty of electricity.
