Smoked Pork Rellanos
I know I've made these before. :) They are one of my favorites.
I used some of the pulled pork from the smoke the other day... http://www.bbq-brethren.com/forum/sh...ad.php?t=91131 roasted some anaheims... http://i245.photobucket.com/albums/g...ro/004-3-1.jpg let them steam for easy peeling.. http://i245.photobucket.com/albums/g...0Pro/010-1.jpg mixed my pulled pork with minced onions and queso fresco cheese.. http://i245.photobucket.com/albums/g...ro/013-3-1.jpg stuffed my peeled, seeded anaheims... then dusted them with flour. http://i245.photobucket.com/albums/g...ro/016-5-1.jpg http://i245.photobucket.com/albums/g...ro/018-3-1.jpg made my batter.. 4 egg whites whipped add 4 TBs of flour, then fold in the 4 beaten egg yolks http://i245.photobucket.com/albums/g...ro/022-2-1.jpg An easy way to coat them.. I dip the bottom of the chile into the batter then spoon a bit on top. Those look great. I have a little over a bushel of roasted Hatch chili's in the freeze. I will be making some of your rellenos for sure. Thanks for posting the recipes you used too!
