Black Walnut?
Is Black walnut a good wood to use for cold smoking? What kind of flavor profile does it give if it is good to use?

Very strong, use it sparingly. I personally don't use it, but thats just me, you may like
it. On another note, I like burning walnut in the open fire pit, nice fire and smells good. |
No....not for smoking.

I've never tried it for cold smoking, but I did throw a chunk on the UDS once when I was doing a couple of briskets. It was good, but is definitely strong. I wouldn't recommend it for anything mild.

I tried it hot smoking some Hog ribs - mistake, it made them taste bitter to me.
But, it sure do burn 'nice' in the wood stove for heat. |
Walnut has an intense flavor, and yes it can be bitter if too much is used, but can still be used for smoking meats. You should mix a small amount with other wood(s). When we have used it for brisket our mix ratio is around 10% walnut and 90% other wood(s)

Walnut = furniture wood. I had a friend do elk with it once and it was Nuh-ass-ty
