Underground Pig (picture heavy)
I'm trying to keep the pics to a minimum, not sure if I did though. Sorry!! This is a pig I cooked this weekend during deer camp. (for a party saturday)
Had a friend dig the pit with a backhoe earlier in the week. Had company Tuesday and Wednesday, Thanksgiving dinner Thursday, then cleaned the pig Friday and started burning wood that night.... http://i245.photobucket.com/albums/g...s/007-11-1.jpg http://i245.photobucket.com/albums/g...es/023-5-1.jpg http://i245.photobucket.com/albums/g...es/061-3-1.jpg http://i245.photobucket.com/albums/g...lves/062-2.jpg http://i245.photobucket.com/albums/g...lves/072-1.jpg Dehaired the pig with a blow torch... http://i245.photobucket.com/albums/g...lves/105-1.jpg Scraped and washed pig... http://i245.photobucket.com/albums/g...lves/132-1.jpg Then put the pig on ice til needed. Started burning wood.... http://i245.photobucket.com/albums/g...lves/159-1.jpg The burning of the wood is a party in itself. :) http://i245.photobucket.com/albums/g...lves/206-1.jpg Seasoned the pig with dry rub, injected with beef broth/cayenne/onion/garlic... filled the inside with apples, onions, whole garlic heads and jalapenos.... http://i245.photobucket.com/albums/g...lves/265-1.jpg wrapped pig in a layer of foil, then burlap, then chicken wire to keep it together... Used baling wire handles for easy lifting. http://i245.photobucket.com/albums/g...lves/259-1.jpg Wet the burlap.... http://i245.photobucket.com/albums/g...lves/291-1.jpg Placed a rack over the hot coals in the pit... Then a sheet of burnt tin. (saved tin from the last three underground cooked pigs) http://i245.photobucket.com/albums/g...lves/231-1.jpg http://i245.photobucket.com/albums/g...lves/240-1.jpg http://i245.photobucket.com/albums/g...lves/298-1.jpg Covered the hole and buried it... http://i245.photobucket.com/albums/g...lves/330-2.jpg Let the pig cook overnight.... http://i245.photobucket.com/albums/g...es/103-2-1.jpg The pig was moist and tender... http://i245.photobucket.com/albums/g...es/106-1-1.jpg http://i245.photobucket.com/albums/g...es/140-1-1.jpg I sprinkled some of the pig with dry rub and served sauces on the side... http://i245.photobucket.com/albums/g...lves/144-1.jpg http://i245.photobucket.com/albums/g...lves/149-1.jpg Thanks for checking out my underground pig! |

Dang, Jeanie, is there ANYTHING you can't do? Simply amazing!
Holy chit- some good stuff going on there.
wow, you never cease to amaze me :icon_blush:
That brings back some great memories!! Course it also brings back some of the ones where "I had to dig the hole" too! A backhoe makes for quick work of digging and gutting too! That is simply fantastic. I'd so hit that! YOU ROCK, Jeanie:eusa_clap:eusa_clap
OMG! That is simply awesome you did an incredible job!
Great looking pig, Jeanie! :-D
Can't get any fresher than that!!!
