Turkey and Ham for 65
 
Hello all,

I've been asked to provide just the meat for a Thanksgiving work lunch next week. They're asking for turkey and ham (I'd provide them whole and they would do the slicing).

Approximately how much raw weight should I be planning to cook of each? I know you typically estimate 1 to 1.5lbs of raw turkey per person, but I am curious how you all would calculate it when providing 2 meats.

me personally id do a 20-22 lb bird and a 20 lb whole ham

I might cheat a bit and do a turkey breast in addition to a full turkey, for those who prefer white meat.

So both of you are of the belief that 1 large ham and 1 large bird (plus possibly 1 breast) would cover it for 65 people?

Honestly, I don't really know exactly how much, I'm just thinking doing a turkey breast in addition to the turkey(s) would probably help.

I can't help with the ham. I have a mental image of how much ham would work for that many people, but I can't tell you how many pounds that equates to.

About 90lbs of whole birds and one large 14-18lb spiral ham would do it. Personally, I'd get the large boneless skin on breast lobes and do about 25lbs of them. US Foods sells these and they are 10lbs each so maybe 3 of those and you'd have it. You will find that people don't eat a lot of ham (at least that's what I find) so I'd still go with the 1.5lbs pp of doing whole birds.

Whole birds is a waste of time and space.
A quarter lb of each meat per person plus sides.
25 lbs of turkey breast and a 20 lb ham would cover you nicely after cooking.
Please slice before giving to the customer. ;)
