Anyone using their mini wsm like a uds?

Hey guys

Been wanting to build a mini uds. Then realized I basically already had one. I've been using a diffuser and drip pan in my mini wsm. But I miss the flavor of the drippings and my chicken isn't getting crispy skin, even though I'm running 300+ degrees. I'm gonna try ditching the diffuser and pan. Basically have nothing between my fuel and food. Anybody doing this with good results?

Thanks!

Food might be too close to the coals on this one, but I'm not sure.

Yeah Trump, that was my main thought too. I'm 7" from the top of the coals to the cooking grate.

Course I can always install 3 more bolts just under the lip of the pot. And just move the grate up there. That'd put me at about 11.5" then.

Build one and see the difference for yourself!

Or buy one from Big Drum Smokers!

Add another tamale pot to gain hight

Funny you mentioned that! I've been seriously toying with the idea of building a bds clone or two!

Swamp are you using open or closed tops for 30 gal mini's?

Btw, I really dig that yellow mini wsm!

Fine idea! Hadn't thought of that one. I also remember reading about a guy using a 36q instead of a 32q. Fit just as good and taller.
