Been to busy fishin' to do much smoking. I got this recipe off a fishing website that I frequent. It was delicious! Gonna have to make it more often as it's very flavorful and healthy to boot (vs deep frying).

Cut your walleye filets against the grain into 1.5-2" chunks. DO NOT undersize chunks.

This is your last chance to inspect each piece and eliminate bones.

For one pound of room temp walleye chunked
use this marinade:

1T of rice vinager
1T hoisin sauce..this is sweet
1T sambal chili paste...this is fire
1T soy sauce
1T olive oil
Optional...all the pressed garlic you desire

Combine walleye and all the above.
Let stand 30 minutes...stiring 3X.

A good no stick frying pan preheated to 400. Lightly oiled.

Dump the eye in. Let stand 60-90 seconds. Stir. It's done in 2-4 minutes..

DO NOT OVERCOOK.

Put the walleye over cooked rice/veggies with all remaining liquid.

Walleye, other mild whitefish, and chicken is great like this.
DO NOT UNDERCOOK CHICKEN.
