Chicken Stew-Pit Barrel Cooker style
Wife found a package of 8 chicken thighs in the freezer. Thawed and cooked on the PBC grate seasoned only with kosher salt and course ground black pepper. Let them cool somewhat and pulled the heart of the thighs and made PBC chicken stew. Seasoned with cumin, cavenders, jalapeño dusting salt, v8 spicy and half a jar of Kylitos habanero salsa. Probably should have used the Dutch oven on the grate, but have been on call a lot so the crockpot (btw the crock is so old it says Made in USA) is finishing the job. Steamed corn tortillas are planned.

Turned out well. You just never know. I've got white corn tortillas and wife crushing Doritos in hers. Jalapeño cornbread would be great.
