Looking for the Brethren's best Sea Bass/Rockfish Recipes...
 
I haven't posted in a few months...
I've been too busy out on the grill, working, going to school, or building smokers.

I'm looking to either smoke a Sea Bass or just flat out grill it. I have never cooked Sea Bass before so I was coming to the place I know best to give me some good tips and ideas on a recipe.

Let me know some suggestions or if you have a good link you could send me to, that'd be great.

Sea Bass is quite an oily fish, and I think you might enjoy it more grilled. A simple coat of olive oil, salt and ground pepper always works nicely, although you also can season it more prominently as well. Recently, I came up with a Moroccan style spice rub which was great on sea bass filets. I didn't write down the ingredients, but here's something close:

  • 1 small onion, finely chopped
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon paprika
  • 2 teaspoons ginger
  • 2 teaspoons salt (kosher)
  • 1 teaspoon cumin
