Smoked Chivo on Indian Fry Bread
I've made this in the past and really liked the flavor the marinade added to the mix.
the dry rub ingredients... about 1 TBS each, garlic, black pepper, thyme, rosemary and paprika. http://i245.photobucket.com/albums/g...ps988d5313.jpg The wet ingredients, water, Worcestershire, A-1, Bufalo Chipotle and this time I added about 1 tsp of Tatonka Dust. http://i245.photobucket.com/albums/g...psdb28f410.jpg http://i245.photobucket.com/albums/g...psa8b998c6.jpg trimmed the goat leg.. http://i245.photobucket.com/albums/g...ps8412b8d6.jpg covered with the dry rub... http://i245.photobucket.com/albums/g...pse4dcfba7.jpg placed into a baggie, covered with the marinade and let it chill out overnight. http://i245.photobucket.com/albums/g...psb9851c7d.jpg into the BPS drum (marinade too) at 275F... http://i245.photobucket.com/albums/g...ps2cae056a.jpg while the goat leg was hanging out in the drum I made some indian fry bread.. 2 cups flour, 1TBS baking powder, 1tsp salt...then add 1 TBS lard..then 1/2 cup warm water. knead and let rest 30 minutes. http://i245.photobucket.com/albums/g...psda26c8b6.jpg http://i245.photobucket.com/albums/g...ps4101a53f.jpg I try to form a ridge around the edges of the bread.
