Smoked Chivo on Indian Fry Bread
 
I've made this in the past and really liked the flavor the marinade added to the mix.

the dry rub ingredients...
about 1 TBS each, garlic, black pepper, thyme, rosemary and paprika.

The wet ingredients, water, Worcestershire, A-1, Bufalo Chipotle and this time I added about 1 tsp of Tatonka Dust.

trimmed the goat leg..

covered with the dry rub...

placed into a baggie, covered with the marinade and let it chill out overnight.

into the BPS drum (marinade too) at 275F...

while the goat leg was hanging out in the drum I made some indian fry bread..
2 cups flour, 1TBS baking powder, 1tsp salt...then add 1 TBS lard..then 1/2 cup warm water. knead and let rest 30 minutes.

I try to form a ridge around the edges of the bread. Gives me half a chance at folding this thing like a taco when it's full. :)

didn't take the temperature of the meat, just pulled it off the heat when it was fork tender...

It was kinda tasty! Will make it again for sure.. Would like to try it on some venison next time.

Norm, thanks! I don't raise them. A friend raises boer goats and I usually get the meat from them. Do you raise goats?
