How would you compare the ribs to other pellet smokers that you have cooked on? Was the level of smokiness to your liking coming from the RecTec?

I used the same pellets and the same rub. Basically same results. Blended nicely with the spices and the pork. I consider smoke an ingredient so I don’t want it to overpower the other ingredients. If it is pronounced the flavor profile isn’t balanced.

Long story short, you know it’s there but it’s not bigger than any other flavor.

Sexy cooker right there, and I know you're gonna turn out some great ribs no matter what you cook 'em on! I've had yer ribs off of Olivia, the Pitmaker, the FE, UDS, and who knows what else - always fantastic!

Hope y'all are good up there - we'll be missing y'all at the pig roast tomorrow!
