We are having out backyard cleared out next week, mostly pines, but there are 5 pretty decent sized oaks as well. I'm planning to save the oak. What do I need to do to season it in order to use it for smoking? I've always bought wood chips/chunks, so I'm totally clueless.

I like a good Kosher salt and fresh ground black pepper myself. :p

Cut it into the lengths you need, stack it - off the ground if outside - and keep the rain off of it if possible. Once the bark loosens up go ahead and take that off and throw it away. It may take a year or so depending on your environment. I have a large live oak that was blown over a year ago and it's still not ready.

I'm one of those guys who pull the wood out of the freezer
