A Pig on the Cinderblock Pit (graphic)
Sorry... a bit graphic!
This was a cook I did 2 weeks ago, it was the last thing I cooked before getting hurt. :ohwell: http://i245.photobucket.com/albums/g...ps278ac27f.jpg picked one of the smallest pigs I had for this cook. (not one in the pic... one in a different pen) Didn't know how many people would be here for the party. http://i245.photobucket.com/albums/g...ps3e15ca84.jpg http://i245.photobucket.com/albums/g...ps12c47002.jpg decided to skin the pig instead of scalding to save time... http://i245.photobucket.com/albums/g...ps7fca81c3.jpg Butterflied to lay flat and chilled overnight... http://i245.photobucket.com/albums/g...psc13a6f3e.jpg Prepared the block pit. Added beer, dry rub and leeks to the drip pans... http://i245.photobucket.com/albums/g...ps1f077564.jpg Injected with a mixture of apple juice, water, worcest sauce, soy, brown sugar and seasoned with a mix of Big Poppa's Money Rub and SYD Meat Rub... http://i245.photobucket.com/albums/g...ps483f8cd3.jpg into the pit... http://i245.photobucket.com/albums/g...psb79c6443.jpg let it go for 4 1/2 hours...adding coals to each end about every 45 minutes. http://i245.photobucket.com/albums/g...psa406b07a.jpg turned and let it go for about 4 1/2 more hours... http://i245.photobucket.com/albums/g...ps76a49a09.jpg http://i245.photobucket.com/albums/g...ps2663f717.jpg let the pig rest covered in the pit for 30 minutes... http://i245.photobucket.com/albums/g...ps95449136.jpg shredded some of the meat... http://i245.photobucket.com/albums/g...psccea8fe9.jpg went the easy route on the side dishes... slaw, potato salad, corn, beans... http://i245.photobucket.com/albums/g...psa3f4a72c.jpg http://i245.photobucket.com/albums/g...ps8781160a.jpg http://i245.photobucket.com/albums/g...ps0135a9d1.jpg Didn't get pics of the veggies, chips and dip and other stuff. There are more detailed pics of the cook on my blog. http://cowgirlscountry.blogspot.com/...nderblock.html It turned out great. Didn't have as many leftovers as I thought I would too. Hope to do another one soon. :) Thanks for looking! . |

That looks deeelicious! I'm going to have to do one of those again. Not only are they really good but fun to cook.

By the way, I've never skinned a little pig but it surprises me that it is quicker to skin than scald.
